Chocolate Chip Cookie Sandwich
We have elevated the Chocolate Chip Cookie! Who doesn’t love Chocolate Chip Cookies - we like our cookies to be soft, not too sweet, and filled with chocolate! We played around quite a bit before figuring out what the best recipe is and sharing it with you and hope you love them.
The Original Plum Cake
I absolutely love eating raw plums but somehow I like them even more when they are cooked, I especially like Plum Cake as the plums give the cake this extra moisture and texture that makes it absolutely delicious. For this Plum Cake I chose to use less sugar than I usually would and I even used Maple Sugar which is a healthier alternative to other sweeteners and can be a good source of nutrients. When buying Maple Sugar make sure to look for unrefined sugar made from pure maple syrup.
Pistachio Muffins with Skyr Frosting
I’m usually not the biggest fan of frosting as I always find it to be way too sweet, this is why this time I decided to use Isey Skyr and Philadelphia with only 25g of icing sugar. This gives the muffins that soft delicious texture and doesn’t add too much sweetness. I have also recently become addicted to pistachio recipes and I’ve discovered that by adding pistachios you can remove some sugar since the pistachios will give that added taste you are looking for.
Soft Chocolate Cake
This cake is the fudgiest and softest chocolate cake we ever made, it feels like you’re eating a very fudgy brownie and it’s absolutely delicious. This is the first time I added boiling water to a cake recipe and was a bit scared it would be too liquid at first but the result turned out to be absolutely perfect.
Skyr Tiramisu
When Iceland meets Italy - I am a huge fan of Tiramisu but unfortunately the mascarpone used to make it always leaves me feeling quite full as it’s heavy and filled with calories (a whopping 400 kcal per 100 grams). Being in love with Skyr and really liking the texture (not too soft not too hard) I though it would be a good idea to use it instead of the mascarpone when making my beloved Tiramisu. The result was really incredible - a soft Tiramisu with an added Skyr taste - different yet traditional, and as an additional bonus I didn’t feel like I had to run for 3 hours in order to burn it afterwards.
Crispy Tofu Coconut Curry
There is nothing I like more than a nice and yummy curry on cold spring days. Even though I usually make my curry with vegetables today I decided to make something different - a crispy tofu curry! The result was delicious and I especially liked how the sweet potato and tofu mix so well together to create this great taste and texture.
No Bake Skyr Matcha Cheesecake
I’m a big cheesecake fan and I always try to explore new ways of making this delicious dessert. This time, I wanted to create something super easy (no bake, no eggs, almost no sugar)! It took some time to get the perfect recipe but what I discovered is that Philadelphia and Isey Skyr go together perfectly and create a perfect texture for this no-bake cheesecake
Matcha Brownies with White Chocolate
Normal brownies are great but have you ever had Matcha Brownies with White Chocolate Chips? These brownies will blow your mind and if you’re not a fan of white chocolate you can also replace it with dark/milk chocolate. I made this recipe around 3 times before getting what I think is the right amount/taste of Matcha so I would not add more than the recommended dose.
Torta Caprese
This recipe is just amazing. Is super simple and incredible tasty. Is a great option is you are looking for a flourless chocolate cake. It reminds me of a nice trip we did in Italy, we stayed in this super nice Airbnb and the owner prepared this cake for breakfast. She was nice enough to share the recipe and the least we can do is share it with you.
Lemon Garlic Bok Choy
Bok Choy just recently started popping up in our supermarkets and it used to be one of those vegetables I used to check out but never buy since I was never really sure how to cook it and every time I had it in restaurants it felt like a fancy time consuming preparation. One day after seeing it so many times I decided that it was time to buy it and cook something with it, and, after a couple of trials I discovered that not only is Bok Choy the easiest vegetable to cook but it’s also absolutely delicious.
Zucchini Bread
Zucchini Bread - yes it has Zucchini, no it’s not savoury - it’s a sweet treat with a vegetable! I always find these mixtures exciting and although you can’t taste too much Zucchini when you eat it, the vegetable gives it a super nice texture. Not only is this the perfect comfort food and perfect for winter days but it’s also super easy to make!
Baklava
Baklava’s can be found all over the Middle East in many different shapes and sizes as well as different nut and spice adaptations - my personal favourites are Pistachio Baklavas but you can easily exchange the Pistachios with for example walnuts - you can also play with the spices or leave them out all together. Baklava’s are extremely fun to make, yes they are quite the calorie bomb but your guests will love them (plus it’s one of those things people think takes AGES to make and will be even more impressed).
Spinach and Cheese Fatayer (Turnover)
Spinach and Cheese Fatayer are one of my all time favourite Middle Eastern dishes along with Hummus and Falafel. Fatayer’s are usually made with a meat filling but the Spinach filling is also quite popular in Lebanon and other Middle Eastern’s countries. The Fatayer’s are quite easy to make you don’t even have to pre-cook the filling.
Chocolate Turrón
Turrón, or torrone, is a special nougat dessert that is very popular in Spain and Italy. It’s usually made with honey, sugar and egg white and sometimes almonds or other nuts. This year we decided to make a very special Chocolate Turrón version made with Alprose Chocolate, Salted Corn Nuts and Corn Flakes - trust us everyone will love it!

These Jam Filled Christmas Cookies are not only a Christmas classic but are also one of my favorite kind of cookies. The best thing about them is that they are super easy to make and you can really get creative with them using all kinds of shapes and tastes.

Caramel Apple Cake with Pecans
If you like apple cakes and caramel this cake is definitely for you! I have always enjoyed a nice apple cake but sometimes feel like it’s missing something and now I understood what - an additional layer of Pecan Crumble and Caramel! This cake is very easy to make and will definitely surprise you. I also decided to warm it up a bit again (microwave or oven) before serving it and it gave the cake a little extra kick.
