Torta Caprese
This recipe is just amazing. Is super simple and incredibly tasty. Is a great option is you are looking for a flourless chocolate cake. It reminds me of a nice trip we did in Italy, we stayed in this super nice Airbnb and the owner prepared this cake for breakfast. She was nice enough to share the recipe and the least we can do is share it with you.
This Italian flourless chocolate and almond cake is named after the island of Capri from which it is believe to be originates. But is very popular in Naples.

Baking Time: 35 Minutes
Ingredients for 6 portions:
125gr ground almonds
50gr Almond slices (optional)
Eggs - 3 room temperature
125gr sugar
125gr butter
125gr dark chocolate (70% cacao)
10ml fresh cream
Baking Powder (around 10 grams)
Powdered sugar for decoration
Preparation:
Preheat the oven at 170°C up and down.
Melt the dark chocolate using the bain-marie method in a metal or glass bowl. Make sure it is big enough as we will use the same bowl to add all of the ingredients.
Once the chocolate is melted remove from the bain-marie and incorporate the butter and mix together.
Add the sugar, the ground and the sliced almonds. Mix together and let it rest. Is important to wait until the mixture is not hot to add the eggs.
Add the egg yolks in the mixture and stir to combine.
In a separate bowl whip the egg whites with beaters until soft and fluffy peaks. Add it with the rest of the ingredients with a gentle folding movement.
Pour the batter in a round baking tray (22 cm) and bake for 35/40 minutes. Insert a toothpick in the center of the cake to check if it’s baked. If it comes out “clean”, with no raw batter it means it is ready.
Dust with powdered sugar, and enjoy!! You can keep the cake for 3 or 4 days.
