Zucchini Bread
Zucchini Bread - yes it has Zucchini, no it’s not savoury - it’s a sweet treat with a vegetable! I always find these mixtures exciting and although you can’t taste too much Zucchini when you eat it, the vegetable gives it a super nice texture. Not only is this the perfect comfort food and perfect for winter days but it’s also super easy to make!

Ingredients for 1 Zucchini Bread:
Flour - 190g
Egg - 1 Large
Brown Sugar - 100g
White Sugar - 100g
Cinnamon Powder - 2 Tbs
Nutmeg Ground - pinch
Olive Oil - 120mL
120ml of Olive oil
Baking Powder - 10 g
Zucchini - 1 Medium
Chocolate Chips - 150 g
Preparation:
Preheat the oven to 180°C
In a bowl mix all the dry ingredients: flour, baking powder, cinnamon, nutmeg, and chocolate chips. Reserve
Grate the Zucchini with a parmesan grater
In a separate bowl mix the rest of ingredients: the olive oil, brown sugar, granulated sugar, egg, vanilla, and grated zucchini and whisk together until all ingredients are combined.
Incorporate the mixture in the bowl with the dry ingredients and mix gently until you get a semi-thick batter.
Take a rectangular mould, grease with butter and flour. Spread the batter in the mould and bake for 45 minutes. The baking time could vary, to make sure the cake is ready insert a toothpick in the center of the bread. If it comes out “clean”, with no raw batter it means it is ready.
