Jam Filled Christmas Cookies
These Jam Filled Christmas Cookies are not only a Christmas classic but are also one of my favorite kind of cookies. The best thing about them is that they are super easy to make and you can really get creative with them using all kinds of shapes and tastes. I usually use Strawberry Jam when making these cookies but you can use all kinds of jams (raspberry, prune and pumpkin are some favorites). You can store these cookies in a container for around 3/4 days.

Cook Time: 8 Minutes
Ingredients for 12 cookies:
Eggs - 3
Butter - 225 g
Granulated Sugar - 150 g
All-purpose Flour - 480 g
Baking Powder - 2 teaspoons
Vanilla Extract - 2 teaspoons
Jam - we used Strawberry Jam but you can use plum, raspberry or even ginger
Icing Sugar - to sprinkle on top
Preparation:
Start by pre-heating the oven to 190°C.
In a bowl mix together the eggs and the sugar until you get a nice foamy mixture.
Take the butter and melt it using bain-marie (or leave it out of the fridge for around an hour before starting). It needs to be at room temperature before you go on to the next step.
Add in the soft butter into the egg mixture as well as the vanilla and keep mixing.
In another bowl mix the flour and baking powder together using your hands.
Add the flour mixture to the egg mixture and start working the dough with your hands for around 7/10 minutes.
Roll the dough to around 5mm and cut it with a round cookies cutter (you can also use a round glass). - cookie making should be fun and there are really no shape rules so you can also use hearts/starts/Christmas trees whatever makes you happy.
Then take a smaller cookie cutter and make a hole in the middle of half of the cookies and remove it (6 should have holes and 6 should not have holes).
If you feel like you don’t have enough dough you can re-roll the scraps and repeat.
Bake the cookies for 8 minutes. Remove them from the oven and let them cool.
Take the cookies without holes and spread jam on them, then take a cookie with a hole and press it to the jam cookie like.
Sprinkle the top part with icing sugar.
