Ginger Cookies
Ginger Cookies are a Christmas favorite - golden and crunchy on the outside, soft and addictive on the inside. The most important thing when it comes to Ginger Cookies are the ground ginger and ground cinnamon - the better the quality the better will be the taste of the cookies.
I usually don’t make many recipes with molasses but with this recipe it’s an absolute must. Another tip is to really work the dough well with your hands and make sure that all ingredients are well incorporated before making little balls and putting them in the oven.
All in all this is one of the easiest cookie recipes you could make and everyone will love them :)

Ingredients for 24 cookies:
Egg - 1
White Sugar - 300 g + 2 Tbs
All-Purpose Flour - 300 g
Ground Ginger - 2 Teaspoons
Ground Cinnamon - 1 Teaspoon
Ground Cloves - 1/2 Teaspoon
Baking Soda - 1 Teaspoon
Butter - 170 g
Molasses - 70 g - we use this one
Water - 1 Tbs
Salt - a pinch
Preparation:
Pre-heat oven to 180°C.
Mix together in a bowl the ground ginger, flour, baking soda, ground cinnamon, cloves and a pinch of salt.
In another bowl, mix together the butter and 150 g of sugar for around 5 minutes. Add in the egg keep mixing and add the water and molasses. Mix together until homogenous.
Take the flour mixture and add it to the molasses mixture. Mix well until everything is combined.
Work the dough with your hands and make little balls (half a gold ball), roll them in some sugar and put the cookies on a baking tray. Make sure the cookies have enough space between each other.
Bake for 9 minutes at 180°C. Let the cookies cool for at least 10 minutes before moving them from the baking sheet.
Serve or store in a cookie box.
