Beijinhos de Coco “Coconut Kisses”

Beijinhos de Coco “ Coconut Kisses” is a typical Brazilian dessert made for parties or coffee breaks. It’s super popular as it’s really easy to make and you only need 3 ingredients. People have been making their version of Beijinhos but the traditional recipe is still the most popular, because it is simple to prepare (you don’t need moulds or special pans) and everybody likes it.

Berliner

The Berliner is a spherical dessert made with a sweet dough fried in oil or fat and filled with any kind of jam, cream or hot chocolate. This dessert is a traditional sweet from Germany where it is known by the name of Berliner Pfannkucher, although nowadays we can find it in many countries including Latin America. Its origin is uncertain, although some say that it was invented by a pastry chef from Berlin in the 18th century. These buns became famous in the region and even more so when Berlin became the capital of Germany, later spreading throughout the country.

The Original Plum Cake

I absolutely love eating raw plums but somehow I like them even more when they are cooked, I especially like Plum Cake as the plums give the cake this extra moisture and texture that makes it absolutely delicious. For this Plum Cake I chose to use less sugar than I usually would and I even used Maple Sugar which is a healthier alternative to other sweeteners and can be a good source of nutrients. When buying Maple Sugar make sure to look for unrefined sugar made from pure maple syrup.

Pistachio Muffins with Skyr Frosting

I’m usually not the biggest fan of frosting as I always find it to be way too sweet, this is why this time I decided to use Isey Skyr and Philadelphia with only 25g of icing sugar. This gives the muffins that soft delicious texture and doesn’t add too much sweetness. I have also recently become addicted to pistachio recipes and I’ve discovered that by adding pistachios you can remove some sugar since the pistachios will give that added taste you are looking for.

Soft Chocolate Cake

This cake is the fudgiest and softest chocolate cake we ever made, it feels like you’re eating a very fudgy brownie and it’s absolutely delicious. This is the first time I added boiling water to a cake recipe and was a bit scared it would be too liquid at first but the result turned out to be absolutely perfect.

Mini Cheesecake with Strawberry and Chocolate

Cheesecake is one of my favorite dessers of all time, the only problem is that I also really like chocolate, so this year for Valentine’s Day I decided to make something a little more special - Mini Cheesecakes with a Strawberry and Chocolate topping. Between the cookie base, the soft cheesecake, the crunchy chocolate and the fresh strawberry you will really get all kinds of tastes and textures in your mouth with just one bite.

Chocolate and Hazelnut Cake

This Chocolate and Hazelnut Cake not only surprised me but instantly became one of my top 3 cakes to make at home - it’s not as easy as other cakes as it’s a bit more time consuming but I would still say that anyone can make this cake at home without having any patisserie knowledge. It’s the perfect cake for special occasions and if you want to surprise someone - it’s a cake that people won’t be able to stop eating that’s for sure.

Dreikönigskuchen (Three King’s Cake)

Taking a little break from Healthy January to get ready for tomorrow’s Drei Könige (Three King’s Day- Epiphany). It commemorates the first two occasions on which Jesus’ divinity, according to Christian belief, was manifested: when the Three Kings visited infant Jesus in Bethlehem, and when John the Baptist baptized him in the River Jordan. In Switzerland we like to eat the King Cake (Dreikönigskuchen) a fun tradition where each person gets a piece of the cake and the goal is to find a little King hidden inside one of the pieces. The person who finds the King gets to wear the crown and be King for a day.

Baklava

Baklava’s can be found all over the Middle East in many different shapes and sizes as well as different nut and spice adaptations - my personal favourites are Pistachio Baklavas but you can easily exchange the Pistachios with for example walnuts - you can also play with the spices or leave them out all together. Baklava’s are extremely fun to make, yes they are quite the calorie bomb but your guests will love them (plus it’s one of those things people think takes AGES to make and will be even more impressed).
