Zucchini and Potato Healthy Gratin
Potatoes are one of my favorite ingredients because they are so varied and you can cook them in so many ways. Today I decided to make a Zucchini and Potato gratin as I wanted something healthy but a bit crunchy - a dish that makes you feel cozy and gives you the feeling that you are treating yourself to something nice while being healthy and nutritious. I made the gratin with parmesan, breadcrumbs and herbs using no cream or milk as this is what makes the dish heavy.
Besides being super easy to make this dish is also super cheap and filling - I love finding dishes that are filling, cheap and healthy it’s a bit like winning the lottery. You can enjoy this gratin either on its own or with some couscous, rice, chicken, tofu or a white fish.

Prep Time: 15 Minutes
Cook Time: 50 Minutes
Ingredients for 2 people:
Zucchini - 2
Potatoes - 3/4 large
Parmesan - 2 Tbs
Breadcrumbs - 2 Tbs
Garlic - 1 Clove
Marjoram, Dill, Parsley or any other herb you like
Olive Oil
Salt & Pepper
Preparation:
Start by pre-heating the oven to 180°C (360 F).
Clean your zucchini and peel your potatoes and slice them finely (not too finely either or else they will burn. They should be around 1/2 cm).
Lay the slices on a baking tray placing first one zucchini then one potato then again a zucchini etc. until you have finished. You can make this dish in any baking try you like round, square, rectangular.
Now in a bowl combine all the other ingredients: parmesan, your herbs, the breadcrumbs, the crushed garlic, the salt and the pepper.
Sprinkle some olive oil on top of the zucchini/potatoes and then spread the mixture on top making sure you are covering everything evenly.
Put the baking tray in the oven an bake at 180°C (360 F) for 50 Minutes or until really golden.
