Lemon Garlic Bok Choy
Bok Choy just recently started popping up in our supermarkets and it used to be one of those vegetables I used to check out but never buy since I was never really sure how to cook it and every time I had it in restaurants it felt like a fancy time consuming preparation. One day after seeing it so many times I decided that it was time to buy it and cook something with it, and, after a couple of trials I discovered that not only is Bok Choy the easiest vegetable to cook but it’s also absolutely delicious.
Zucchini Bread
Zucchini Bread - yes it has Zucchini, no it’s not savoury - it’s a sweet treat with a vegetable! I always find these mixtures exciting and although you can’t taste too much Zucchini when you eat it, the vegetable gives it a super nice texture. Not only is this the perfect comfort food and perfect for winter days but it’s also super easy to make!
Zucchini and Potato Healthy Gratin
Potatoes are one of my favorite ingredients because they are so varied and you can cook them in so many ways. Today I decided to make a Zucchini and Potato gratin as I wanted something healthy but a bit crunchy - a dish that makes you feel cozy and gives you the feeling that you are treating yourself to something nice while being healthy and nutritious. I made the gratin with parmesan, breadcrumbs and herbs using no cream or milk as this is what makes the dish heavy.
Zucchini Fritters with Skyr Tzatziki
Today I woke up craving Tzatziki maybe because I was missing summer or maybe because I wanted something fresh and light. I had all the ingredients to make Tzatziki in the fridge (Isey Skyr, lemon, cucumber) but I wasn’t sure what to pair it with. Vegetarian Stuffed Zucchini
I love this recipe so much because it’s simple, cheap yet so special and delicious - it’s literally made with 4 ingredients (if you want to make it vegan it’s only 3) and it’s mainly baked in the oven so you really won’t have to spend too much time cooking. You can make plenty of other variations by adding other vegetables (e.g. mushrooms, spinach, pumpkin, carrots, brussels sprouts etc)

Fiori di Zucca or Zucchini Blossoms in English are an Italian specialty that most people are not aware of, so much so, that over 90% of all Zucchini Blossoms worldwide are thrown away!! This is absolutely crazy not only because they are delicious but also because they are super healthy and very easy to cook.
Tombet
Tombet is made with potatoes, red pepper, aubergine, zucchini and tomato sauce so it’s not only vegan but also quite cheap :) This dish requires all the vegetables to be cut into 1cm slices and fried - don’t worry it will not result heavy or oily in the end if you drain your veggies well enough.
