Ginger Shortbread Cookies

The origins of gingerbread cookies are believed to date back to ancient Greece, where an aromatic spice cookie was frequently made. It wasn't until the 13th century, however, that gingerbread cookies as we know them today began to be popular in Europe. Gingerbread cookies became even more popular during the Renaissance era, when they were often given as gifts.
Nowadays, gingerbread shortbread cookies are enjoyed all over the world. In Germany, they're called Lebkuchen and are often decorated with frosting or chocolate. In other parts, they're called Pfeffernusse and are typically smaller and more crunchy than other types of gingerbread cookies. No matter where you enjoy them, these tasty treats are sure to bring some holiday cheer!
This Ginger Shortbread Cookie recipe is super easy to make and great for novice and experienced cooks.

Ingredients:
All-Purpose Flour - 200g
Butter - 125 g (room temperature)
Icing Sugar - 50g
Fresh Ginger (Grated finely) - 3 teaspoons
Preparation:
Start by pre-heating the oven to 180°C (350°F) - take a baking sheet and prepare it by placing some parchment paper on it.
Take a bowl and beat the softened butter with the grated ginger until you get a creamy paste, at this point add the sugar and keep mixing. Now also add the flour and keep mixing. If you feel like your dough is too hard you can add some lukewarm water (don’t add too much water).
Leave the dough to rest for 15 minutes
Take your dough and roll it on a clean, lightly floured surface to about 1 cm thick. Once you have finished rolling the dough take either a cookie shape or a glass thats’s around 4/5cm in diameter and start making round cookies. Place the cookies on the baking sheet making sure there is enough space between each cookie.
Bake the cookies for 12 minutes until they are lightly brown.
Remove from the oven and make sure you let them cool before serving/eating them.
