Healthy Vegetable and Feta Pasta
I was really craving veggies today and have become slightly addicted to kale chips so I decided that it was time to integrate them into a dish. The initial idea was to make this pasta with feta, asparagus and kale but when I saw the fresh leek I couldn’t resist throwing it in as well and I have to admit - this might be one of the best pastas I ever made.
It’s not only super easy (you literally just have to wash the veggies and chop them and cook up some pasta) but it’s also so so good. The kale and asparagus are crispy, the feta creamy and the kale and lemon are so well incorporated into the dish and create an abundance of flavours. I will say that literally anyone can make this dish, even the “I can’t make anything” type of people.
Prep Time: 3 Minutes
Cook Time: 20 Minutes
Ingredients for 2 portions:
Penne (or any other pasta you prefer) - 240 g (1.2 cups)
Leek - 1
Kale - 100 g (0.5 cup) -really as much as you want I actually added a bit more as I love roasted kale
Asparagus - 6/7 asparagus
Feta - approx. 1 block 200 g (1 cup)
Lemon - half
Olive OIil
Chilly Flakes
Salt & Pepper
Preparation:
Pre-heat the oven to 200°C
This pasta is super easy to make - we start by getting out our baking tray and cleaning and chopping our vegetables. Throw them all into the tray, add the feta as well and sprinkle with some olive oil, chilly flakes and pepper. Place the baking tray in the oven and bake for 20 minutes.
Meanwhile start cooking your pasta, if your pasta is done before the 20 minutes are over just drain it and sprinkle it with olive oil so that it doesn’t stick.
Remove the baking tray from the oven and add the pasta, mix well, add the juice from half a lemon and you’re already done!
