Healthy No-Bake Power Balls
These healthy no-bake power balls are my new go to vegan snack - they are yummy and healthy and super super easy to make. I made these power balls using only 4 ingredients: maple syrup, peanut butter, chia seeds and oats (for the oats I used a porridge mix which also had some goji berries and sunflower seeds but you can also use plain oats or go crazy).
The best thing about these no-bake power balls is that you can make them on a Sunday and literally eat them for the whole week - perfect for when you need a little pick me up during work.

Baking Time: No Bake!
Ingredients for around 12 balls:
Maple Syrup - 115 g
Oats - 80 g
Peanut Butter - 120 g
Chia Seeds - 70 g
Preparation:
In a bowl add the oats and the chia seeds and mix with your hands.
In another bowl add the peanut butter and maple syrup, if you have a microwave use it to melt the two ingredients together (around 1 minute) if you don’t put them in a sauce pan and gently heat them up just enough that they melt together and mix well with a spatula or spoon.
As soon as the peanut butter and maple syrup have become one thing, add them to the first bowl.
Mix with your hands, everything should be mixed well - leave in the fridge for 15 minutes.
Once the 15 minutes are over you can work your paste into 10 to 12 balls. You can already eat them if you want but they are always best after a couple of hours in the fridge.
I always store my no bake balls in the fridge as this how they stay nice and firm (and you can eat them for around 4/5 days)
