Pistachio Cake

A couple of days ago we started to really crave pistachios and at the same time something sweet so we right away thought we should bake a pistachio cake for the first time. We love pistachios based sweets like Pistachio Baklava and wanted to make our very own cake - just a bit less caloric but still very tasty.

When starting with the recipe try to buy already peeled pistachios (as we killed our fingers peeling them) and pistachios that are not salted so that you can avoid washing them before grinding them! You can also enjoy this cake without the frosting if you are not a fan of cream cheese.

Prep Time: 15 Minutes

Cooking Time: 60 Minutes

Ingredients Cake(for a 22 cm mold)

  • Pistachio - 140 gr

  • Sugar - 200 gr

  • Butter (room temperature) -145 gr

  • Baking powder - 10gr

  • Eggs (room temperature) - 3 Large

  • Pinch of salt

  • Flour - 115 gr

  • Whole Milk - 60ml

  • Half tablespoon of vanilla extract

For the frosting:

  • Soft cheese/ Philadelphia (room temperature) - 200 gr

  • Glaze Sugar- 100 gr

  • Dash of lemon juice

  • Pistachios (Grinded) - 40 gr

How to:

  1. Let's start by pre-heating the oven at 160ºC and washing your peeled pistachios under some cold water in order to remove the salt. Dry the pistachios with paper towels once you are done.

  2. Grind 180gr of pistachos until they are close to being a powder. Separate 40gr for the frosting.

  3. In a separate bowl mix the soft butter and the sugar, the result should be a soft texture. Use an electric mixer. Add vanilla and a pinch of salt.

  4. Add one egg at a time to the bowl mixture and mix each time until each egg is completely incorporated.

  5. Add the grind pistachios (140gr) and mix until fully incorporated.

  6. Then add the milk, the sieve flour and the baking powder. Again mix until everything is fully incorportated.

  7. Use a round mold to bake the cake (22cm).

  8. Make sure you grease the mold with butter and a little bit of flour.

  9. Bake for 60/70 min at 160ºC. To check if the cake is ready you can use a toothpick or a sharp knife, poke the cake and it should come out clean.

  10. Let it rest for 10min and start making the frosting. Mix the soft cheese, the sugar glaze and a dash of lemon juice until you get a soft texture.

  11. Remove the cake from the baking tray upside down on a plate and spread the frosting with the help of a knife or a spatula.

  12. Finally decorate the cake drizzling the grind pistachio over the cake. Enjoy it:)
