Natillas

We keep going with Spanish week with a very popular dessert. Natillas is a rich vanilla-flavoured egg custard from Spain, lightly flavoured with cinnamon. It is a very easy dessert to make and it is absolutely delicious.

Made with eggs, milk, cinnamon, sugar and cookies - Natilla will remind you of a custard, but it’s better.

Prep Time: 5 Min

Cooking Time: 20 Min + 2 Hours Rest

Ingredients for 2:

  • Milk - 330ml

  • Eggs - 4 yolks

  • Sugar - 45 gr

  • Vanilla extract

  • Cookies - 2 (Butter Cookies)

  • Cinnamon

How to:

  1. In a bowl, beat 4 egg yolks with 50ml of milk.

  2. In a saucepan, heat the remaining milk with the 50 gr of sugar and the vanilla extract. You don’t want the milk to boil so make sure it is at medium heat. You will notice if it’s too hot as small bubbles will start forming.

  3. Pour a quarter of the warm milk into the first bowl with the egg yolks and mix.

  4. Put everything in the saucepan with low heat - it is very important that we don’t boil the mixture but just keep it warm and stir continuously until it is thick - this process will take around 15 min.

  5. Once you have a gooey texture that sticks together remove it from the heat and put it in a bowl somewhere to cool.

  6. Once it is cool you can start serving it. Put it in a bowl, spread some cinnamon on top and place the cookie on the very top.
