Manchego Biscuits

Manchego biscuits are a lovely savory snack you can make with multiple types of cheese by simply replacing the Manchego with for example gruyere or parmesan. We decided to make them with Manchego as it is after all Spanish Week and we wanted to use this delicious cheese.

Manchego is a cheese made in the La Mancha region of Spain from the milk of sheep of the Manchega breed. It is aged between 60 days and 2 years. Manchego has a firm and compact consistency and it’s also perfect with some bread and olive oil.

Cooking Time: 20/25 Min

Ingredients for 2:

  • Flour - 100 gr

  • Butter - 70 gr

  • Manchego (grated) 75 gr

  • Egg - 1 yolk

  • Thyme or other herbs you may like

  • Salt - a pinch

How to:

  1. Pre heat the oven to 180 Degrees.

  2. In a bowl, mix the flour, thyme, a pinch of salt and the grated cheese. Add the butter and mix all the ingredients together with your hands until you get a floury paste.

  3. Add the egg yolk - mix everything again with your hands until you get a homogenous paste.

  4. Roll the the dough in a cylindric shape and cut slices of 5 mm

  5. Once you have cut all your biscuits put them on a baking tray with baking paper and bake for 20/25 Min at 180 Degrees (top and bottom).
