Vegetable Chips
These Vegan Vegetable Chips are what every dinner party needs. Thy are absolutely delicious and super easy to make and the best part is that you decide what veggies to use so you can use leftovers or go crazy with all kinds of veggies. This time I decided to use carrots, parsnip, sweet potato, beetroot and zucchini (my all time favourites are parsnip and sweet potatoes).
Healthy No-Bake Power Balls
These healthy no-bake power balls are my new go to snack - they are yummy and healthy and super super easy to make. I made these power balls using only 4 ingredients: maple syrup, peanut butter, chia seeds and oats (for the oats I used a porridge mix which also had some goji berries and sunflower seeds but you can also use plain oats or go crazy).
Muhammara (Red Pepper Dip)
Hummus has become one of our favorite dips and we have all had Baba Ganoush but have you tried Muhammara? Muhammara is a hot red pepper dip that originated from Aleppo, Syria and apart from being vegan and delicious it’s also super easy to make! Muhammara has got it all, it’s spicy yet sweet, thick but creamy and fits perfectly on a mezze platter with some Pita Bread, Hummus, Babaganoush or with meat/ fish. Something delicious you can also make are sandwiches with Muhammara and grilled vegetables.
Baba Ganoush (Aubergine Dip)
Baba Ganoush is a delicious dip made with grilled Aubergines. Similar to Hummus, Baba Ganoush is eaten with pita bread or raw vegetables such as carrots, fennel, peppers or cucumber. Traditionally Baba Ganoush is made by grilling the eggplants on an open flame which gives the dish an additional layer of smoky flavour but for this recipe you will only need your oven.
Vegan Chocolate Cookies
Vegan Cookies are definitely not just for vegans - try these ones and you will understand why. They are fluffy, delicious and 100% chocolatey! The only real difference is that you will be working with vegan butter and almond milk - how could they not be good. When making these cookies make sure you don’t make a lot more or a lot less than 16 as this means that you will have made cookies that are too big or too small and this will affect the cooking time in the oven.

Herb Guacamole
Mexican Week starts with an Enrique Oliviera inspired Herb Guacamole made without tomatoes and instead using herbs and spices to give it an exceptional taste. In our opinion this herb guacamole is fluffier and lighter than many other versions which ask to add garlic, tomatoes and sometimes paprika.
