Vegan Chocolate Cookies

Vegan Cookies are definitely not just for vegans - try these ones and you will understand why. They are fluffy, delicious and 100% chocolatey! The only real difference is that you will be working with vegan butter and almond milk - how could they not be good.

When making these cookies make sure you don’t make a lot more or a lot less than 16 as this means that you will have made cookies that are too big or too small and this will affect the cooking time in the oven.

Ready in only 30 minutes you will fall in love with these delicious vegan chocolate cookies.

Ingredients for 16 Cookies:

  • Vegan Dark Chocolate - 100 g (plus a little more for the topping) we used this one

  • Vegan Butter - 110 g

  • White Sugar - 80 g

  • Brown Sugar - 100 g

  • All Purpose Flour - 125 g

  • Cocoa Powder - 50 g

  • Baking Soda - 1 Tbs

  • Almond Milk - 1 Tbs

  • Vanilla Extract - 1 Tbs

  • Salt - a pinch

Preparation:

  1. Start by pre-heating the oven to 180°C.

  2. Get a bowl and add the brown and white sugar along with the vegan butter and the vanilla extract. Mix well with a hand mixer.

  3. In another bowl we will mix the dry ingredients together: flour, cocoa powder, baking soda and salt. Mix with your hands.

  4. Pour the dry ingredients into the wet ingredients mixing everything with your hands.

  5. Ass the almond milk and keep mixing until you get a delicious dough.

  6. Cut the chocolate into small chunks and add them to the mixture (the smaller you make them the more they will melt into the mixture and the browner the cookies will get. You can also use bigger chunks.

  7. Mix your dough well and start rolling little balls (you should be able to make around 16 balls). Every time you make one place it on the baking tray.

  8. Bake the cookies at 180°C for 11 minutes. Once the 11 minutes are done add some more chocolate chunks to the cookies by pressing them in. Let them rest for at least 10 minutes before serving them.
