Sweet Potatoes with Marshmallows

Sweet Potatoes with Marshmallows is a traditional American classic I discovered during a Thanksgiving dinner. I have to admit when I first saw the dish I thought it was either a joke or a cute way to make kids eat more sweet potatoes. Then I tried it, and for the rest of the evening I couldn’t stop eating this strange but delicious purée of sweet potatoes and marshmallows.

This time I decided that I didn’t want t purée the sweet potatoes and that I would just serve them whole with the marshmallows on top, this makes the dish a bit lighter as you are using way less butter and it’s also quite cute to serve.

This is definitely a side dish that is best paired with plain foods (e.g. Turkey or Chicken, Peas, Brussels Sprouts etc). It’s definitely worth a try especially if you’ve never had it before. It’s also a great dish to make for bigger dinners with friends or family (you will see that a surprising amount of people no matter where they are from will go wild over this dish).

Ingredients for 4:

  • Sweet Potatoes - 4 Small / Medium Sized

  • Butter - 50g

  • Mini Marshmallows - if you can’t find the mini ones you can buy the normal sized ones and then cut them with scissors

How to:

  1. Honestly this recipe is too easy! Pre-heat the oven at 200°C

  2. Don’t peel the sweet potatoes, simply wash them and put them on a baking sheet

  3. Let them roast in the oven for around 1 - 1.5 hours. You will ideally be checking how soft they are every 5 minutes after the hour has passed. You can do this either by using a toothpick or a knife.

  4. Once the sweet potatoes are soft take them out of the oven and let them rest for 5-10 minutes.

  5. When the sweet potatoes have cooled down a bit cut them with a knife (not in half just cut them making a nice opening). This is where you will insert your marshmallows.

  6. Put as many marshmallows as you want / as fit and place the sweet potatoes back in the oven for 10-15 min at 180°C.

  7. When you see that the marshmallows are getting roasted and brownish on top you can remove the sweet potatoes from the oven.

  8. Let them chill a little before serving.

  9. Volià.. so easy
