For those who have never had Flammkuchen, it is the french version of a pizza, simply thinner and easier to make (and you don’t need yeast or baking powder)! Originating from Alsace, a historical region in Northwestern France bordering Germany and Switzerland, Flammkuchen is generally eaten with Creme Freche, Bacon and Onions but you can really top it with anything you like.

This time I decided to make my Flammkuchen with Potatoes and Rosemary as that’s what I had left in the pantry and the result was absolutely delicious. There is nothing I love more than the taste of crunchy oven baked potatoes - on top of crunchy Flammkuchen and in between them a layer of Crème Fraiche. I also tried to make a vegan version using this vegan cheese spread and the taste was incredible.

Honestly this is one of the quickest dishes you can make and you can throw anything on it, so it’s also great for when you don’t have much left at home and are unsure of what to cook.

would like.Prep Time: 10 Minutes - the dough doesn’t need much rest

Cooking Time: 20 Minutes

Ingredients for the pastry:

  • White Flour - 250 gr

  • Olive Oil - 2 Tbs

  • Lukewarm Water - 125 ml

  • Salt - Half tea spoon

For the topping:

  • Creme Freche - 100 gr (for vegans full fat coconut cream)

  • Spring Onions - 2 or White Onion - 1

  • Potatoes - 4

  • Rosemary Bunch

  • Salt & Pepper

  • Olive Oil

How to:

  1. Pre heat the oven at 220 degrees celsius.

  2. Start by making the dough -super easy - add the water, olive oil, flour and salt into a bowl and work the dough with your hands until it’s hard (5 min).

  3. Make a ball with the dough and place it in a kitchen towel and put it aside.

  4. Now we can start working on the topping. Take your potatoes, peel them and cut them into super thin slices (they have to be really thin in order to cook well in the oven as we are not boiling them beforehand.

  5. Also clean the spring onions and cut them diagonally (or the white onion depending on what you prefer).

  6. Once your toppings are done take the dough out and work it until you have made a rectangle or a circle similar to a pizza.

  7. First spread the Creme Freche (or your full fat coconut cream) then add the spring onions and potatoes as well as salt and pepper. We will add the rosemary once the Flammkuchen is out of the oven.

  8. Put the Flammkuchen into the oven and cook for 20min at 220 degrees. After 20min see if you are satisfied with the crunchiness of the dish and if not leave it in for another 5min.

  9. Add the rosemary and enjoy :)
