Creamy Pea Soup

I could honestly eat soup everyday and one of my all time favorite soups is this Creamy Pea Soup which only requires a handful of ingredients and is ready in less than 45 Minutes.

I like to prep this soup and either freeze it or put it in the fridge if I know I will be eating it throughout the week. You can freeze it for up to 6 months - what I like to do is divide it in containers that fit exactly one portion - it makes life so easy when you don’t know what to cook / have no time.

This soup is also amazing because of other two reasons: you can make it anytime using frozen peas and you can eat it either warm in the winter or cold gazpacho style in the summer. I personally don’t like to add too much cream to the soup and only add a drop in the end but if you want it to be really flavorful and thick I would suggest to add it.

While mixing the soup make sure all the peas are mixed in, as they are small it’s important to really be thorough.

Cooking Time: 35 Minutes

Ingredients (for 4):

  • Peas 1 kg
  • White Onion - 2
  • Cream - 20g (only if you want to)
  • Parmigiano Reggiano - 50g
  • Extra virgin olive oil 30g
  • Vegetable Broth 400g
  • Salt & Pepper to taste
  • Celery / Nutmeg for serving

Preparation:

  1. We start preparing the pea soup with the vegetable broth. Heat it up at medium high heat and let it rest at low heat.

  2. Peel the onion and chop it up.

  3. Get a pan and heat the oil slightly over low heat and add the onion. Let the onion get golden over low heat, stirring often to avoid burning.

  4. After a couple of minutes add the peas (fresh or frozen - if you use frozen you don’t have to defrost them), add salt and pepper and mix everything together.

  5. Let it cook for about 5 minutes, then pour in all the vegetable broth.

  6. Continue cooking for another 15-20 minutes without a lid, then turn off the heat and using an immersion mixer blend everything together until you get a smooth consistency. If you feel like you need more liquid you may add some hot water or some cream. If you feel like it’s too liquid leave it to cook at medium low heat for a little longer in order for the water to evaporate.

  7. Your Creamy Pea Soup is pretty much done and you can choose to eat it like this. You can also choose to add some cream in the end to make the soup creamier and you can also sift the soup in a colander to remove the “thicker” part. Honestly I like my soup without sifting it and happily skip this step.

  8. Serve the soup and garnish with some Parmesan and ground Nutmeg. You can also add some celery to the top.
