Blueberry Pie
We love eating blueberry pies in cafés and restaurants but we had actually never made one at home and were craving one this weekend so we tried. Honestly this was one of the easiest pies we ever made (and also one of the tastiest) and now is the right moment to make one as blueberries are in season and are much cheaper :)
You can also make this recipe with raspberries or strawberries - hope you enjoy it.

Ingredients for 22cm baking tray (3/4 people):
Blueberries - 1 Kg
Cornstarch (Maizena) - 4 Tbs
Cane Sugar - 3 Tbs
Salt - a pinch
For the pastry:
Flour - 185g
Sugar - 70g
Butter - 75g
Egg - 2
How to:
Pre-heat the oven to 180ºC.
We start with the dough. In a bowl add the flour and butter cut in small squares (the butter has to be very cold). Use the tip of your fingers or a fork to mix until you get a sandy texture.
Add the egg and the sugar. Use your hands to knead to a smooth dough. Wrap the dough in a film and let it rest 1 hour (min 30min)
Put the blueberries, sugar and cornstarch in a pan until the blueberries have released all their liquids (5min) and put aside.
Pour a little flour on the surface on which you are going to stretch the dough, put it on top and press with your hands so that it stretches a little. Use a rolling pin to stretch until the diameter is 1cm bigger than the baking tray and 3mm thick. Leave 1/4 of the dough out to make small strips for the top decoration.
Place the rolled out dough in the baking train, pour the blueberry mix on top and then start making your stripe decorations.
Paint the dough on top with egg.
In a preheated oven at 180ºC bake for 45min until the pastry is completely cooked (Golden colour).
Let the pie rest for 5 min and enjoy :)
