Chocolate Muffins
Today I will share my favourite Chocolate Muffin recipe with you. These muffins are so easy to make and so delicious that once you start making them you will really struggle to not make more every week.
When it comes to Muffins I love to experiment and try out different kinds of flavours and chocolates but my all time favourites are the Munz Dark Chocolate Muffins made with Munz Chocolate 70%. You can also add chocolate chips if you want to make your muffins even more “chocolatey”.
As you can see this batch I made was half chocolate muffins and half “normal” muffins. For the normal recipe just remove the chocolate and add some lemon zest to the mixture.
Prep Time: 15 Minutes + 1 Hour Resting Time
Rest Time: 15 Minutes
Ingredients for 12 Muffins:
Munz Dark Chocolate 70% - 200 g
Eggs - 4
Sugar - 150 g
Milk - 60 mL
Sunflower Oil - 80 mL
Butter - 110 g
Flour - 200 g
Baking Powder - 10 g
Salt - a pinch
Preparation:
Start by melting the butter and let it rest.
Beat the eggs together with the sugar until it starts to foam. Add the butter, oil, and milk. Beat again until all the ingredients are uniform.
Sieve the flour and mix it in as well along with the baking powder and a pinch of salt.
Beat by hand or If you do it with the mixer, use the lower speed. Store the mixture in the fridge for an hour, this step is very important.
Now you can melt your chocolate with the bain-marie method and leave it on the side.
Once you have taken your mixture out of the fridge add the melted chocolate and mix well.
Preheat the oven at 220° C.
Place the mixture inside paper or silicone muffin molds and put them in an oven tray. Don’t fill the molds completely as the muffins will rise in the oven.
Add little sugar on top (optional)
Bake for ten minutes. After ten minutes, lower the temperature to 200ºC and continue baking for five more minutes. Before removing them from the oven, check with a toothpick or knife to see if they are completely baked (the toothpick should come out clean). Let cool and enjoy!!
You can store them in a closed bag or recipient for a couple of days.
