Summer Salads with Spinach

May has finally arrived and we can finally find some of our favourite ingredients back in the supermarket - spinach, strawberries, beets to just name a few. As you may know, we try to eat as much local and seasonal food as possible as it is not only fresher and healthier but it also produces less waste, supports local businesses and supports sustainable agriculture. The less your food has traveled to come to you the better.

The quarantine mood (cooking every day and having to be on calls all the time) + the warmer weather really got us into the salad fever as they are so simple and delicious to make. Here are our favourite three spring salads.

The Protein Salad

Prep Time: 10 Min

Ingredients: Cherry Tomatoes, Feta, Chickpeas, Spinach, White Onion, Lime (for juice)

How To: Cook the onion and the spinach in a pan for around 5 min. Place all the ingredients in a bowl and mix together. Add lime juice, salt and pepper.

The Sweeter One

Prep Time: 10 Min

Ingredients: Spinach, Pomegranate Seeds, Apple, Parmesan or Feta

How To: Wash everything, cut the apples, peel the pomegranate and extract the seeds and put everything in a bowl.

Our favourite One

Prep Time: 10 Min

Ingredients: Strawberries, Spinach, Mint, Feta, Walnuts, Balsamic Vinagre, Olive Oil

How To: Wash everything and cut the strawberries. Place everything a bowl, mix and season with olive oil and balsamic vinegar.
