Vegetarian Stuffed Eggplants

Eggplants are one of our favorite vegetables: they are rich in many nutrients, high in antioxidants, promote blood sugar control and may even promote weight loss! Apart from all these benefits, eggplants are also absolutely delicious and so easy to add to your diet.

This stuffed eggplant recipe is a great mid-week dinner idea and also a good vegan option if you remove the mozzarella!

Cooking Time: 40 Minutes

Ingredients per person:

  • Eggplant - 1 Large

  • Onion - 1 small

  • Garlic - 1 tooth

  • Mozzarella - 100/150 g

  • Cherry Tomatoes - 5/10

  • Basil - 2/3 fresh Leafs

  • Oil

  • Salt

  • Pepper

How to:

  1. Heat the oven at 200 C fan.
  2. Start by washing the eggplant and slicing it in half lenghtways. Take a knife and carve inside the eggplant leaving a 1 cm boarder, then take a knife and remove all the eggplant meat and put it aside.
  3. Take the eggplant shells, sprinkle them with oil and place them in the oven for 20 min.
  4. While the eggplants are cooking you can work on the stuffing. Start by dicing the onion, garlic, tomatoes, eggplant meat and basil.
  5. Sprinkle some oil into a pan and start cooking the garlic and onions for around 2/3 minutes, then add the eggplant meat and let cook for another 5 minutes before adding the tomatoes, basil, salt and pepper.
  6. Cook until the eggplant meat is golden and all the ingredients look like a paste, turn off the heat and add the diced mozzarella and stir.
  7. Remove the eggplants from the oven and stuff them with the delicious stuffing you just finished making.
  8. Place the eggplants back in the oven and cook for another 15/20 min
  9. Enjoy :)
