This week Spanish Week starts and we decided to start with a refreshing, super easy vegan gazpacho! We promise this will be the easiest recipe you will ever make and you will be thanking us forever. Made with tomatoes, green pepper, bread, cucumber, olive oil, garlic and red vinegar this is also a very cheap dish.

The great thing about Gazpacho is that it is vegan and very healthy so you can enjoy 2/3 bowls if you like :)

Ingredients for 2:

  • Ripe Tomatoes - 600 gr

  • Cucumber - Half

  • Green Pepper - Half (if you can’t find the green one you can use a red pepper)

  • Garlic - 1 clove (or half if you don’t love garlic)

  • Olive Oil - 1.5 Tbs

  • Red Wine Vinegar - 2.5 Tbs

  • Salt & Pepper

  • Bread - One slice of white bread (possibly bread from the day before that’s a bit dry) you can also skip the bread and the gazpacho will be more liquid

How to:

  1. Clean and slice all your ingredients - the cucumber should be peeled and the tomatoes as well (tomatoes, cucumbers, garlic, pepper & bread) and throw them into a blender along with the olive oil & red wine. Mix for a couple of minutes.

  2. Put as much salt and pepper as you like

  3. Take another slice of bread, cut it into cubes and fry them with some oil to garnish.

  4. Enjoy :)
