Crêpe Suzette
Crêpes Suzette is a typical French dessert made with a crêpe and an orange, butter and Grand Marnier sauce. Grand Marnier is an orange based liqueur from France made with the distilled essence of bitter orange and sugar, you can use the Italian Gran Gala as a substitute or any other orange based liquor if you can’t find Grand Marnier.
This recipe is quite exciting as you will be turning the Grand Marnier on fire in the pan which really makes a show if you have guests over. Make sure you use a kitchen lighter and make sure you are careful and don’t burn yourself.
Prep Time: 20 Minutes (+ 30 Minutes Rest Time)
Cooking Time: 15 Minutes
Ingredients for 8 Crêpes:
For the Crèpes:
Eggs - 3
Whole Milk - 500 ml
All purpose Flour - 250 g
Butter for greasing the pan
For the Garnish:
1 Orange
75 g powder sugar
125 g butter (soft)
15 cl Grand Marnier

In a large bowl, add the orange zest the soft butter and powdered sugar and whisk to obtain a creamy consistency.
Lay the crêpes on a plate and fill them with this Suzette preparation we just made, fold them in 4 (like a fan), and arrange them in a large frying pan with a knob of butter.
Heat the Grand Marnier in a separate saucepan, once it’s hot, pour it quickly over the pancakes in their pan and remove from the fire. Time to “flambé” the crêpes (light them on fire with a kitchen lighter) and let the fire burn out, be careful not to burn yourself.
Enjoy them hot.
