Vegan Grilled Asparagus and Shiitake Tacos

More and more people have started showing interest in the vegetarian and even vegan lifestyle and eating less meat seems to be one of the top new year’s resolutions for 2020. The problem arises when we have to switch from cooking with meat and animal products to cooking vegan - not everything tastes as great and good vegan recipes are not that easy to find.

Today we want to tell you about a super easy vegan recipe - Grilled Asparagus and Shiitake Tacos. They are not only super easy to make but also extremely tasty!

Prep Time: 15 Minutes

Cooking Time: 10 Minutes

Ingredients for 4:

  • Crushed Garlic - 4 Cloves

  • Asparagus - 10/15 stems

  • Salt

  • Pepper

  • Shiitake Mushrooms (200/300 grams) - you can also use another type of mushroom (e.g. champignons)

  • Green Onions

  • Corn Tortillas - 8/10 - warm them up in the oven

  • Homemade guacamole (if you don’t want to make the guacamole you can simply add avocado and tomato to the tacos)

  • Kale

  • Limes - as many as you like

  • Extra: Hot Sauce or any other vegan sauce

How to:

  1. In a large baking dish combine oil, the crushed garlic the salt and the pepper. Let simmer for around 2 minutes and add asparagus, shiitakes (or another type of mushroom) the kale and let grill for around 10 minutes turning the asparagus and mushrooms occasionally.

  2. Once the veggies look crunchy and delicious place them on a plate while you work on your guacamole or on cutting your extra ingredients (avocado, tomatoes, onions, etc).

  3. Place tortillas in the oven

  4. Cut the asparagus and mushrooms in the desired slices and start preparing your tortillas placing all the ingredients inside and add the hot sauce or your sauce of preference
