Vegan Rice Paper Spring Rolls
This Vegan Rice Paper Spring Rolls recipe is one of my favourite healthy things to eat and it’s also super fun to make especially if you are inviting friends over and they can fill their rice rolls with whatever filling they want.
I like to make these rolls with multiple vegetables but my definite favourites are: carrots, cucumbers and baked tofu.

Ingredients for Tofu:
Tofu - 1 Block
Vegan Sriracha Mayo - 2 Tbs
Soy Sauce - 1 Tbs
Olive Oil - 1 Tbs
Other Ingredients:
Rice papers - around 8 to 10
Red Pepper - half
Carrot - 1
Cucumber - half
Green Onions - 2
Red Cabbage - some leaves
Jalapeño - a couple of peppers
Additional: you can add any other toppings you like: thin rice noodles, lettuce, mint, basil
Preparation:
The first thing you will have to do is marinade the tofu. Don’t cut it just jet just add the sriracha mayo, the soya sauce and olive oil to a bowl and add the tofu - make sure it’s well coated and leave it to rest for 30 minutes.
Pre-heat the oven to 200°C - once the 30 minutes have passed lay the tofu on a baking sheet and bake for around 15 minutes. Then remove it from the oven and cut it into think strips.
Cut all of your vegetables Julienne style (thin matchsticks) and place them somewhere where they are easily reachable.
Take a large bowl and fill it with hot water. The important thing now is to have all your ingredients right next to you and that you have a space where you will make the rolls.
One by one put the rice papers in the water until they are soft. It takes max 40 seconds for a rice paper to become soft depending on the brand. Shake the excess water off and place the rice paper on your work surface and let it sit for a minute.
Now start putting your filling on the rice paper, make it as neat as possible making sure there is some space on each and of the rice paper. As soon as you are happy with the filling it’s time to wrap your roll. Lift one side of the rice paper and fold it over the filling then do the same with the other end, then roll the ends and close it tightly.
Do this with all the rice papers until you have finished your filling and serve with some Peanut Sauce.
