Spicy Thumbprint Cookies

These Spicy Thumbprint Cookies are a perfect way to spice up your usual Christmas cookies - they are made with delicious 74% Alprose Fairtrade Dark Chocolate and fresh red chillies and are a perfect treat for anyone.

Some tips before making the cookies - make sure you don’t make them too large, this recipe should yield around 35 cookies if you make less than 33 it means your cookies are quite big and the filling/cookie ratio will be different plus they will take more time to bake (it’s no big deal but just so you are aware). The second tip is when you make the hole with your thumb make sure you are delicate - you don’t want to perforate the entire cookie or crack it too much. Third and last tip, if while making the dough you realize that it’s too soft just add some flour.

Ingredients for around 34 cookies:

  • All Purpose Flour - 260 g

  • Baking Powder - ½ Tablespoon

  • Salt -  ½ Tablespoon

  • Butter - 170 g 

  • Granulated Sugar - 100 g

  • Egg - 1

  • Vanilla Extract - 1 Tablespoon

  • Alprose 74% Dark Chocolate - 200 g

  • Fresh Red Chillies - 3 small

Preparation:

Start by preheating the oven to 180°C.

  1. In a bowl mix together the flour, baking powder and salt with your hands.

  2. In another bowl beat the softened butter and sugar until you get a fluffy mixture, then add in the egg and vanilla extract. Keep mixing for another minute.

  3. Add the dry ingredients to the wet ingredients and mix with the hand blender for around one minute. Then start making the dough with your hands. If you realize that the dough is too liquid you can add some flour until you get the right consistency (it should not be sticky).

  4. Using your hands make little balls (2 cm in diameter) and put them on a baking tray with parchment paper. As soon as you put the little dough ball on the paper press it lightly with your thumb in the middle. Repeat this step until you have made all your cookies (make sure they are not too big and that the hole you are making with your thumb is not too deep). 

  5. Take a pan and put 200 g of Alprose 74% Dark Chocolate in bain-marie. Chop up the chillies very finely and add them to the bain-marie. 

  6. As soon as the chocolate has melted you can fill the little holes you made with your thumb in the cookies with delicious spicy chocolate.

  7. Once all the cookies are filled put them in the oven and bake for 14 minutes or until golden. If you made larger cookies leave them for an additional ⅔ minutes.

Will keep for approx. 2 days outside of the fridge
