Red Lentil and Carrot Soup
This delicious Red Lentil and Carrot Soup is perfect for colder days and when you need some healthy comfort food. It’s super easy to make, extremely cheap and incredibly tasty. Top it off with some vegan coconut yogurt for the perfect balance.

Ingredients:
Yellow Onion - Half
Carrots - 2 (peeled and diced)
Garlic - 1 clove
Ginger - 2 cm piece (around 1 inch)
Turmeric - 1 teaspoon
Cayenne Pepper - 1 teaspoon
Red Lentils - 280g (1.5 cups)
Vegetable Broth - 1L (4 cups)
Warm water - 500mL (2 cups)
Lemon - half for juice
Olive Oil
Salt & Pepper
Toppings: Cilantro, Vegan Coconut Yogurt
Preparation:
1) In a small heat 1L (4 cups) of water and add your vegetable broth - heat up.
2) Add some olive oil to a large pot and once warm add the diced onion and cook for 2/3 min. After this add the diced carrots, garlic, and ginger and cook for 2 minutes then add the turmeric and cayenne, along with a pinch of salt and pepper. Cook for another minute and add the washed lentils and the vegetable broth and water.
3) Being everything to boil then reduce the heat to medium-low and simmer until the lentils are tender for around 15 minutes.
4) Now take your blender and puree the soup (it doesn’t need to be fully liquid you can just purée it a bit). Add the lemon juice, taste the soup and check if it needs additional salt or pepper.
5) Serve right away and add any toppings you may like (I added vegan coconut yogurt and cilantro)
