Pico de Gallo
Pico de Gallo is one of my favourite Mexican dishes. It’s not exactly a dish and more of a salsa but I can eat it with anything. I like t serve Pico de Gallo with Guacamole, put it inside tacos, mix it with grilled vegetables or even on fish and meat. Pico de Gallo is so healthy and it has such a short prep time that it’s a real must for any Mexican evening or even when you want to add some taste to your grilled chicken, vegetables etc.
There are only 5 ingredients in the Pico de Gallo and the most important one is the Jalapeño peppers which we buy in El Maiz. If you don’t like raw onions you may leave them out but they really do give an extra kick.

Ingredients (for 2 portions)
Tomatoes - 6 medium size tomatoes (you can also use good cherry tomatoes)
Red Onion - 1 small
Cilantro - 6 stems
Jalapeño Peppers - 2/3
Half a lime
Salt
How to:
This salsa dish is so so easy to make, it’s literally a one step recipe.
Chop the tomatoes, the red onion and the chiles. Add everything in a bowl, sprinkle the cilantro and salt and add a bit of lime juice (don’t add too much or it will become too acidic).
Voilà your Pico de Gallo is ready - go easy with the Jalapeños and check first how spicy they are, you can always add more.
