Pasta Pomodoro e Spinaci
How many times do you feel like you have no idea what to cook for lunch? Yes you want something healthy but especially if you are keeping active and need to survive through another half day at work you need something filling - some salad leaves won’t do.
My motto is - when in doubt Pasta! - and no, not pasta with some jar sauce full of preservatives and god knows what. Pasta with delicious, healthy home made sauce. Now don’t click away scared that this recipe will take you 3 hours to make, home made sauce can actually take as little as 10 minutes to cook and will give you so much satisfaction.
This Pasta Pomodoro e Spinaci is my go to dish when I’m tired and lazy, or simply when I’m craving Pasta with tomato sauce. The beauty with this dish is that you can replace or add the spinach with whatever you want (mushrooms, bell peppers, aubergines etc…)
Prep Time: 5 Minutes
Cooking Time. 15 Minutes
Ingredients:
Pasta - 200/300 grams per portion
Tomatoes - 2/3 tomatoes per portion
Spinach - 300 grams per portion
Salt - A pinch
Pepper
Onion - 1
Extra:
Parmesan
Preparation:
Start by chopping the onion and tomatoes and washing the basil.
Drizzle some oil into a pan and add the chopped onion, let it cook for some minutes.
Add the tomatoes and let them cook for around 5 minutes at medium heat.
Put some water to boil, once it’s boiling add some salt and the pasta of your choice.
Add the spinach to the tomatoes and let cook for another 10 minutes (keep adding some water from the pasta The salty, starchy water not only adds flavour but helps glue the pasta and sauce together; it will also help thicken the sauce.
Add salt and pepper to your sauce.
Drain the pasta and throw it into the sauce while still hot. Mix and serve!
