One Pot Tomato & Spinach Pasta
The One-Pot Tomato & Spinach Pasta is the absolute perfect recipe for when you get home in the evening and have NO IDEA what to cook and don’t want to waste too much time doing so.
This is not the traditional way of cooking pasta and yes you may get some backlash from your Italian friends but once they have tried your One-Pot pasta we are sure they will change their mind.
Prep Time: 5 Minutes
Cooking Time: 10 Minutes
Ingredients (for 2/3 portions)
Spaghetti - 400 gr (we use Barilla Nr. 5)
Cherry Tomatoes - 300 gr
Onion - 1 Large
Fresh Spinach - 150 gr
Olive Oil
Water
Parmesan - as much as you like
Garlic - One clove
Chilly - if you want to add some spice
How to:
Cut the onion, cherry tomatoes and wash the spinach leaves.
Place all the ingredients in a big enough pot.
Pour some olive oil over everything and add around half a liter of water (until the spaghettis are covered). Don’t worry if not every single ingredient is covered as the spinach leaves will also leave some water and you can always add some if you see that things are drying up.
Cook everything for 10 min at high heat (it needs to be boiling)
Once the 10 minutes are over add your grated parmesan which will make everything super creamy and enjoy your pasta.
