Lentil Salad with Baked Feta
A couple of weeks ago I realized that I was maybe eating a little bit too much pasta (as it is my favorite dish ever) and decided that I would give myself a break from it. From then on I started eating so many lentils, beans and chickpeas and started growing addicted to Beluga Lentils as they are so delicious and really fit well into almost any recipe.
This 15 minute Lentil Salad with Baked Feta is one of my all time favorite lentil dishes as it is super easy to make, a little bit spicy if you add the chilly, delicious with the lime juice and the baked warm feta really brings everything together.
You can also make this dish with normal green beans but I had flat green beans in the fridge and decided to work with these today :)

Cook Time: 10 Minutes
Ingredients for 2 people:
Flat Green Beans - 200 g
Beluga Lentils - 200 g
Feta - 200 g
Red Onion - 1
Chili Pepper - 1 small
Lime - 1
Salt & Pepper
Preparation:
Pre-heat the oven to 200°C.
Take your feta and place it in a small baking tray on some aluminum foil along with the sliced red onion, the juice from one lime and the cut chilly pepper. Put it in the oven and cook for 10 Minutes.
For this recipe we use canned beluga beans - rinse these off well in a sieve until all the foam is gone. Place them in a pan and warm them up for 3 minutes. Once cooked you can already put them on the plate as a first layer.
Meanwhile, bring some water to boil. Once it is boiling add the flat green beans and cook for 4 minutes. Then drain. Take the pan you used before and grill the flat green beans with some salt for around 4/5 minutes or until they start to get crunchy. At this point you can place them on top of the cooked beluga beans which are already plated.
By now or very soon the 10 minutes should be up and your baked feta will also be ready. Once ready take it out of the oven, plate the feta on top of the flat green beans and add the juice on top as a sauce - yum!
Your healthy lunch/dinner is served :)
