Spaghetti with Pistachio Sauce

These Spaghetti with Pistachio Sauce are perfect for when you don’t have much time but want something a little bit special. When cooking a quick lunch we tend to make pasta with tomato sauce or something even more basic forgetting that tasty recipes don’t always take long to make.

I had never tried Spaghetti with Pistachio and today I decided that I wanted to treat myself to something I had never made before - something that I could prepare from start to finish in only 15 minutes. So I decided to try something out and was very happy with the result of this recipe.

The sauce is a non cook sauce which means you just have to mix all the ingredients together with a mixer, cook the pasta and add the two things together - it doesn’t get much easier than this. The best part is that not many people will have had this pasta before so if you decide to make it for your guests they will not only find it really interesting and delicious but they will also think that it took you a really long time to prepare them :)

Prep Time: 5 Minutes

Cook Time: 10 Minutes

Ingredients for 2 people:

  • Spaghetti - 200 g

  • Peeled, Unsalted Pistachios - 70 g (if you are peeling them make sure you buy a bag that is at least 200 g as they weigh more with the shell)

  • Water - 100 mL

  • Basil - 7 leaves

  • Olive Oil - 100 mL

  • Parmesan - 50 g (grated)

  • Lemon (for the zest)

  • Salt

Preparation:

  1. Start preparing your Spaghetti with Pistachio sauce by getting the sauce ready. In a large bowl mix together the peeled unsalted pistachios, the water, the grated parmesan, the grated zest from one lemon and the basil. Once your mixture is homogenous add the olive oil and mix a little more. Leave the sauce in the bowl.

  2. On the side cook your spaghettis in salted water (the usual cooking time is around 10 minutes but check the box for instructions).

  3. Once your spaghettis are done, drain them very quickly and throw them into the bowl with the sauce right away (you want them to still be a little wet and not fully drained as this will make the sauce creamier).

  4. Your spaghettis are ready to be served :)
