Vegan Tofu Burrito
There are so many times when I’m not sure what I want to eat but I know I want it to be filling, delicious and a bit “dirty” - these Vegan Tofu Burritos are one of my go-to dishes in these situations. They are easy and quick to make, super yummy, healthy but at the same time a bit messy. They also don’t require very many ingredients and are quite cheap which are additional points!
You can make these Vegan Tofu Burritos in many different ways and you can add ingredients or remove ingredients. You can even use planted chicken or meat alternatives instead of the Tofu or you can use Chickpeas instead of the Black Beans - you can go wild! I hope you enjoy them!

Ingredients for 4 Burritos:
Brown Rice / White Rice - 120g (0.5 cups)
Extra Firm Tofu - 200g (7 oz)
Lime - 1 (juice from one lime)
Black Beans - 200g (7 oz) - if you don’t like beans or don’t digest them well you can leave them out or replace them with chickpeas for example
Avocado - 1 (to make guacamole)
Tortillas - 4
Jalapeño Peppers - 20 (depending on how spicy you want it to be)
Salsa - here you can either use for example Vegan Sriracha with some vegan sour cream or make the sauce you prefer (we made Sriracha with vegan sour cream)
Salt & Pepper - you can also add any other seasonings (e.g. taco seasoning)
Optional Toppings: Vegan Cheese, Cilantro, Tomatoes
Preparation:
Rinse the rice well and cook it according to package instructions.
In the meantime prepare your other ingredients: juice the lime, press excess moisture from the tofu (place it between paper towels) and rinse the beans.
Crumble the tofu into a medium bowl and add salt & pepper and any other seasoning you may want to add. Stir and add the lime juice as well. Make sure everything is mixed well.
Get a non-stick pan and place it on medium heat and add the marinated tofu. Cook for around 10 minutes or until the tofu is slightly brownish/golden. Now add the beans as well and cook for another 4/5 minutes.
While you are cooking you can prepare your avocado. Slice it and smush it together with a fork - you can also make this delicious Herb Guacamole or just add some salt and pepper to your avocado and make sure you have a nice paste.
You can now also prepare your salsa: we used vegan sour cream with vegan Sriracha and mixed them together.
Heat your tortillas (either in the oven or in a pan)
Now you can assemble your burrito: spoon in the cooked rice, add the tofu and bean mixture, the avocado/guacamole, the salsa, the jalapeños and any other toppings you may want to add (e.g. vegan cheese). Make sure you don’t over fill the tortilla or you won’t be able to close the burritos properly. Tuck in the ends and tightly roll up the burrito (it takes a bit of practice).
Your burritos are ready to be served! You can always put some additional salsa on the side in case there’s not enough inside the burrito.
