Risi e Bisi
Risi e Bisi is a Venetian dish, typical of Venetian, Vicentine and Veronese cuisine, based on rice and peas. The best time to have Risi e Bisi is in the spring as this is when peas are in season and the dish will be even better. Risi e Bisi is one of those typical “poor dishes” that taste absolutely delicious.
Risi means rice while Bisi means peas that’s where “Risi e Bisi” comes from
For a vegan option you can definitely use vegan bacon or leave it out completely and use vegan parmesan - I would then add a bit more onion or you could even add some additional spices.

Ingredients:
Green Peas - 800g (28 ounces)
White Rice - 300g (1½ cups)
Bacon or Raw Ham - 50g (1.8 ounces)
Parmesan Cheese - 40g (½ cup)
Vegetable Broth - 1L (4.2 cups)
White Onion - Half
Parsley
Oil
Salt & Pepper
Preparation:
Remove the peas from the shell and set them aside.
In a small pot add 1L of water and your broth and heat it up.
Wash the pods well and boil them in salted water for 10 minutes.
Blend the pods that you just boiled - it should be a liquid mixture - put aside.
In a pan, heat two tablespoons of olive oil, add the bacon (cut into small pieces) and the onion and cook for around 4/5 minutes.
After the 5 minutes have passed add the rice, mix and add the pod mixture we blended before. Add some salt and pepper.
Again after 5 minutes add the peas, stirring and adding the broth in little by little.
Keep cooking for another 5/10 minutes - the result should not be too liquid nor too compact. Make sure your rice is well cooked and that you have added enough salt and pepper to taste (if not you can always add more).
