Yes, spinach is super healthy and is filled with vitamin K, vitamin A, vitamin C, folate, magnesium, iron etc etc but let’s be honest, spinach on it’s own can be quite dull if you don’t add cream or cheese (which makes it a little less healthy again). I fell in love with this vegan dish the first time I tried it because of the great mix between the salty spinach and pine nuts and the sweet dry raisins - this is really a dish for everyone and I can imagine kids everywhere loving this dish as well. (Important side note - I usually HATE dry raisins and remove them anywhere I find them but when they are complementing a salty dish they’re really really good).

You can eat the Catalan-Style Spinach either alone as a starter or as a side dish to a main dish (e.g. chicken breast, white fish etc).

Prep Time: 20 Minutes

Cook Time: 35 Minutes

Ingredients for 2 people:

  • Fresh Spinach - 500 g

  • Pine Nuts - 50 g

  • Dry Raisins - 50 g

  • Garlic Clove - 1

Preparation:

  1. Cook the fresh spinach with a tablespoon of olive oil until they lose all the water. It will take around 15 minutes. Reserve the spinach.

  2. In the same pan, toast the pine nuts. When they begin to become golden, we also add the raisins and the finely chopped/ crushed garlic clove . Cook for one more minute and add the spinach.

  3. Mix all the ingredients with the help of a spatula or wooden spoon and by shaking the pan. Cook for 1-2 more minutes until all ingredients are hot and serve

  4. Enjoy!
