Caprese Salad
One of the staples of Italian cuisine is the Caprese Salad - so easy to make yet so delicious! The most important thing when it comes to Caprese are the ingredients - use good Mozzarella di Bufala and good tomatoes. I usually use either Cuore di Bue (Beefsteak Tomatoes) or Cherry Tomatoes depending on which ones look better when buying them.
When it comes to the Mozzarella I usually buy “the real thing” and not the typical packaged ones from the supermarket as it really makes a difference. I like to eat my Caprese Salad with a fresh Focaccia or some home made bread.

Ingredients for 2 people:
Mozzarella di Bufala - 2
Tomatoes (Beefsteak Tomato/ Pomodoro cuore di bue or cherry tomatoes) - 2
Basil - Some Leaves
Salt - a pinch
Olive Oil - 2 Tbs
Balsamic Vinegar - as much as you like
You can sprinkle some oregano and pepper as well
Preparation:
The easiest preparation of all: wash your tomatoes and cut them. Cut your mozzarella as well and plate both things.
Add the olive oil, basil leaves and a pinch of salt.
If you wish also add some balsamic vinegar, pepper and oregano.
