Burrata and Basil Tagliolini with Fried Aubergines

As you know, I’m a pasta lover and could eat pasta every day! Today I felt like making something a little bit different as I craved something crunchy and something creamy at the same time so I decided to make this Burrata and Basil Tagliolini with Fried Aubergine sticks.

By mixing the burrata with the basil and olive oil you get a deliciously creamy sauce on which you can lay the fried aubergine sticks which elevate your pasta dish even further. This dish literally takes 20 minutes to make but tastes like it came out of a restaurant. An important step is to check that your sauce has enough salt once you have mixed it with the hand blender as it’s already quite delicate and if there is not enough salt it might taste dull.

Ingredients for 2 people:

  • Tagliolini - 250 g (1 cup)

  • Aubergine - half an aubergine

  • Burrata - 1 medium/large

  • Basil - around 20 leaves

  • Pine Nuts - as many as you like (we used around 20)

  • Olive Oil

  • Salt

Preparation:

  1. We start this recipe by preparing our delicious sauce. Put the burrata, basil and 2Tbs of Olive Oil in a bowl and mix together with a hand blender and add some salt. Yes, it’s that easy - your sauce is already done!

  2. Put some water to boil for the pasta - remember to add salt!

  3. We now move on to step two - the fried aubergine sticks. Wash the aubergine and cut it into thin strips. In a pan heat some olive oil (enough to cover the aubergine strips), throw the strips inside and fry for around 7 minutes or until they are golden and crispy. Remove from the heat and place the strips on some kitchen paper to dry out the extra oil.

  4. Your water will now be boiling, cook your tagliolini for the time stated on the packaging (ours was 5 minutes), add 1 Tbs of cooking water to your sauce and mix. Drain your tagliolini.

  5. Once your tagliolinis are drained place them in a bowl and mix in the sauce. Plate the tagliolini and add the aubergine strips and pine nuts on top. Drizzle some olive oil and add some parmesan if you wish.

  6. Your pasta is ready to be served :)
